Preheat oven to 350 degrees Fahrenheit
1 cup Jeb Foods Cassava Flour
1 cup almond flour
1/2 cup arrowroot flour
1/2 cup packed brown sugar
1/4 cup raw sugar1 tsp baking soda
1 tsp sea salt
1 cup Earth Balance Vegan Butter (softened)
1 tbs vanilla extract
4 dashes cinnamon (optional)
3/4 cup of chocolate chips of choice
3/4 cup of chopped walnuts or pecans (optional)
1/2 cup dried cranberries
In a large mixing bowl combine all dry ingredients. Add all wet ingredients except for chocolate chips and optional add-ins. Mix with an electric mixer until dough is smooth. Add chocolate chips and any add-ins. Mix again.
On a greased cookie sheet, drop spoonful size dough balls evenly on cookie sheet. Bake for 10 minutes. Cookies may seem under-cooked, but this when they are ready to come out. Nut flours, such as almond flour can burn very quickly. They will become more firm as they cool. Transfer cookies from cookie sheet to cooling rack. Repeat until all dough is gone. Makes approx 24 cookies.
